Sydney’s Exclusive Wedding Venue, Park Hyatt, Announces New Executive Chef



Park Hyatt is synonymous with luxury, and that includes the food! Sydney brides can now look forward to the creative culinary delights of new Executive Chef Franck Detrait at their wedding. The French born chef brings his years of experience to The Dining Room, Park Hyatt’s signature restaurant. He has worked as an executive chef around the world including Dubai and Paris and his accomplishments include What’s On Magazine’s ‘Chef of the Year’.

Impress your guests with Sydney’s best view and a brand new menu to match at Park Hyatt Sydney. Franck’s innovative menu of contemporary cuisine showcases Australian flavours cooked with French techniques. “Franck creates his own culinary universe – mixing products such as caviar and chervil root and researching the finest of ingredients,” says Park Hyatt, “He defines his cuisine as ‘revisited modern traditional’, where his dishes are created using modern concepts and traditional techniques.”

A Stunning Sydney Wedding at Deckhouse

In December 2012, Silvia and Robert had a magnificent wedding in Sydney and enjoyed their elegant reception at the exclusive Deckhouse venue.

The Engagement…

Although Silvia and Rob were acquainted, the couple only started dating after Rob was the Master of Ceremonies at Silvia’s sister’s wedding. When Rob, a professional Master of Ceremonies host, was hired for a wedding in Fiji, he asked Silvia to join him for a get-away. After the wedding obligations, Rob whisked Silvia away on a private seaplane to the nearby remote Yasawa Islands. The couple enjoyed time at the exclusive Navutu Stars resort on Yageta Island and Rob proposed to Silvia under the beautiful night sky during a romantic evening on the beach.

The Wedding Attire…

Silvia wore an exquisite vintage inspired couture wedding dress with a low-cut back. The white sweetheart dress showed off beautiful, fine Chantilly French Lace in the bodice with soft organza that swept to the floor. Rob looked impeccable in a classic black Versace dinner suit and D&G bow tie. The couple had a bridal party of four that consisted of their siblings and two friends. Silvia’s bridesmaids wore rich ivory coloured dresses from Carla Zampatti that were contemporary in style and complimented the couple’s overall theme. Like Rob, the groomsmen sported classic black Versace suits and ties.

The Wedding Details…

The couple had a charming ceremony at Holy Name of Mary in Hunters Hill while they celebrated their reception at the fabulous Deckhouse at Woolwich Dock. From the beginning, Silvia and Rob wanted a classic wedding with simple yet elegant features. The couple chose a timeless monochromatic colour palette with whites and shades of ivory for their décor. Likewise, Flowers on Norton created a tasteful bridal bouquet for Silvia and arranged the couple’s centrepieces at Deckhouse to fit in perfectly with their neutral colour palette. Chandeliers To Die For also assisted with the exquisite décor while Adoremos Cakes made a beautiful ivory coloured, round tiered cake. Deckhouse was the perfect reception venue for Silvia and Rob since the venue really grasped the couple’s wedding concepts. With its extremely elegant features, Deckhouse has a natural yet sophisticated feel with its authentic timber beams and spectacular views over Sydney’s stunning harbour.

Throughout the night, a personal friend of the couple, Emilio Panetta’s band Soul Nights, entertained their guests and brilliantly set the celebratory mood. Silvia and Rob celebrated their wedding with 200 guests. The couple decided to serve a 3-course, sit-down dinner at their reception including fresh seafood, French Champagne and a combination of exclusive delicacies that Deckhouse provided.

The couple chose D’Amico Photography as their wedding photographers since Rob had worked with John D’Amico for many years and the couple appreciated D’Amico Photography‘s  reputation, professionalism and aesthetic. D’Amico Photography beautifully captured Silvia and Rob’s intimate ceremony and remarkable reception at Deckhouse.


After their celebrations at Deckhouse, the couple spent their wedding night at The Observatory Hotel at The Rocks (now the Langham Hotel). The couple then took off on a month long honeymoon to St Barth’s and Anguilla in the Caribbean, Playa del Carmen in Mexico and spent three days in Las Vegas. They currently live in North Strathfield and hope to continue travelling and start a family in the near future.
